Pan-Roasted Chicken Breast with Kiwifruit Relish

What you need:

Fresh Kiwifruit Relish:
* 3 ZESPRI™ Green Kiwifruit, peeled, diced
* 1 orange, peeled, segmented, chopped
* 1/2 c. red pepper, seeded, diced
* 1/2 c. tomato, seeded, diced
* 1/4 c. cilantro, chopped
* 1/4 c. green onion, sliced
* 1 Tbsp. jalapeno pepper, seeded, diced
* 1 Tbsp. rice vinegar
* 1 1/2 tsp. EACH salt and pepper (optional)

Chicken:
* 4 chicken breasts, skin on
* 2 Tbsp. olive oil
* salt and pepper (optional)

What to do:

1. Fresh Kiwifruit Relish - Combine all ingredients in bowl; set aside.
2. Preheat oven to 450°F. Sprinkle chicken breast with pepper and salt, if desired. Preheat oil in large ovenproof frying pan over high heat. Add chicken, skin side down and cook 2 to 3 min. until browned. Flip chicken and place frying pan in oven.
3. Bake 12 to 15 min. until chicken reaches an internal temperature of 155° F. Serve with kiwifruit relish.

Note: Nutritional analysis is based on use of 1/2 tsp. of salt in relish and no salt on the chicken.
